22 Apr Wild Orange Olive Oil Cake (vegan)
This cake was the second attempt.. the first attempt I used buckwheat and spelt flour and found that it was a bit too dense and not as light as i wanted. SO, this one is a little bit naughtier than I would like but it’s a treat! AND SO YUMMY! I looked up a few recipes online and just combined the ingredients I had in the cupboard to make it, plus added Wild Orange Essential Oil!
+ 3/4 Almond Milk
+ 1/3 Extra Virgin Olive Oil
+ 1 Orange worth of Zest
+ 10 Drops Wild Orange Essential Oil
+ 2 cups all-purpose flour
+ 1 cup White Sugar
+ 1 1/2 tsp Baking Powder
+ 1/2 tsp Baking Soda
+ 1 tsp Salt
+ 2 tbsp Poppy Seeds
+ Preheat oven to 180 degrees fan forced
+ Combine the wet and dry ingredients in two seperate mixing bowls (if you need more wet ingredients, just add some extra Almond Milk!)
+ Combine wet ingredients with the dry and mix together. Taste test to see if you need more Wild Orange Essential Oil, it’s up to you!
+ Grease 20cm cake tin, pop in the mixture and bake for 30mins!
+ Pop on a cooling tray and then ice!
I then used icing sugar, orange juice and nutelux as the icing and sprinkled with some poppy seeds. But, have fun with the decorations!
