Vegan Spelt, Almond Meal + Cinnamon Chocolate Chip Cookies

COOKIES! Yes. Please. 🍪🍪

I love cinnamon so much! The Cinnamon Bark essential oil is derived from a beautiful, tropical tree that grows up to 45 feet high! This oil is steam-distiled from the bark. Cinnamon is mostly used for flavouring food, but it can also be great for warming your senses on those cold winter days! I decided to tweak a vegan cookie recipe and add some of the oil in! They remind me of German cinnamon Christmas cookies (perfect for dunking)!

🍪 Vegan Spelt, Almond Meal and Cinnamon Chocolate Chip Cookies! 🍪

– Ingredients –
1 cup of Wholemeal Spelt Flour
1/2 cup of Almond Meal
Pinch of Salt
1/2 tsp of Baking Soda
1/4 cup of Canola Oil
1/3 cup Maple Syrup (or rice malt syrup)
2 tsp of Vanilla Extract (optional)
1/4 cup of sugar free Chocolate Chips
1 drop of Cinnamon Bark Essential Oil (or two if you really like it!)

– Method –
Preheat oven to 180 degrees. Place all ingredients together in a bowl and mix to combine. Portion out 1 tbsp of cookie mixture and place on baking tray and bake for 10mins!
